Recipe: Char-Grilled Oysters

Fall is made for cooking over an open fire. This delicious char-grilled oyster recipe from closet Cooking is a great way to get your oysters out of the bag and onto the plate. Pulling references from classic NOLA-style recipes, these oysters are topped with sizzling butter and melty cheese and cooked over an open flame to suck in all of the smoky goodness. What You Need:

  • 1 dozen White Stone Oysters
  • Stick of butter
  • 1 tsp. Worcestershire sauce
  • 2 cloves garlic, grated
  • 1 tbsp. chopped parsley
  • 2 tbsp. Lemon juice
  • ½ cup pecorino romano cheese, grated 
  • Salt and pepper
  • Cayenne pepper to taste

 

What To Do:

  1. Start by building a small cooking fire, or firing up the grill. We recommend either a wood or charcoal fire to give the oysters a natural, smoky touch.
  2. Shuck your White Stone Oysters
  3. Mix butter, garlic, lemon juice, Worcestershire sauce, cheese, cayenne, salt and pepper, and parsley.
  4. Place your oysters on your cooking surface.
  5. Let them cook until they start to bubble around the edges.
  6. Quickly scoop roughly 1 tablespoon of your mixture onto each oyster.
  7. Cook until the cheese is golden brown.
  8. Serve with lemon wedges and a hot sauce of your choice.

 

This delicious cooked oyster recipe is a great way to get a smoky flavor onto your oyster. White Stone Oysters are plump and meaty, with a light salinity, making them perfect for this recipe. The flavors of the smoke and cheese will adhere to the oyster giving it an even more savory, umami flavor with every bite.
